Rest Time Recommendations
Resting lets juices redistribute. Thin steaks (under 1 inch): 5 minutes. Standard steaks (1-1.5 inches): 7-8 minutes. Thick-cut or roasts (2+ inches): 10-15 minutes. As a rule: rest for half the cooking time.
Carryover Cooking Tips
Residual heat continues cooking after you remove the steak. Thin steaks carry over 3-4°F. Standard steaks: 5-7°F. Thick roasts: up to 10°F. Always pull your meat before it hits target temperature to avoid overshooting.
